What's cooking?

I recently came to the conclusion that I was eating out to much, and decided that this week, I would try to make as many meals as possible... I started out by accessing what I had in my pantry, and then going thru the recipe book... This week, I am rehashing some oldies but goodies.. Next week, I plan to venture into all of the recipes I cut out becuase they "sounded amazing" but have yet to try...

meatballs from Monday night!

Menu this week:
Lunches consist of: Turkey & Cheese sandwiches, yogurt, salads, and left overs... of course not all at the same time..
Dinners consist of:
spaghetti and meatballs, Sour-cream & Chicken Casserole, meatloaf minis, and grilled chicken summer salad..

I will do my best to blog any new recipes that I try and love... 1st at the request of Maddy, is the:

Sour Cream Chicken Casserole

I have made this recipe several times, it is incredibly easy, and always receives great reviews ......

8 oz. package of stuffing mix, divided
1/2 cup of butter melted and divided
8 oz. of sour cream
10 3/4 can of cream of chicken soup
10 3/4 can of cream of celery soup
4-6 boneless, skinless chicken breasts, cooked and cubed

Layer half of stuffing mix and half of the butter in the bottom on a 2-quart casserole dish. In a bowl, mix sour cream, and soups. Spoon mix over stuffing. Top sour cream mixture with chicken. In bowl mix together remaining stuffing and butter. Spread over chicken.  Bake at 350 degrees on middle rack for 45 minutes total (30 min covered with foil, 15 without foil)
