Corn Chowder...

Today at work, I started to feel as though I might be getting sick, no surprise, since I have been going non-stop and many of my friends are sick.. None the less, I decided I would head home and make some homemade soup. Tonight I decided to opt for Corn Chowder, it is a easy recipe, and one of my favorites. I made mine tonight without ham or bacon, as I didn't have any at the house.. I look forward to having some for lunch tomorrow!
 
(note this is while it was cooking, still thickening up)
  • 2 medium red potatoes -- ½" cubes
  • 1 cup cooked ham -- ½" cubes
  • ½ cup red bell pepper -- diced
  • ½ cup celery -- coarsely chopped
  • 1 teaspoon butter
  • 2 tablespoons flour
  • 14 ounces chicken broth
  • 12 ounces fat-free evaporated milk
  • 15 ounces creamed corn
  • 2 tablespoons chives -- sliced
  • salt and pepper -- to taste
  • cooked bacon -- crumbled
  • Heat butter in medium saucepan over medium heat. Add bell pepper and celery; cook and stir 3-4 minutes or until vegetables are crisp-tender. Stir in flour; heat until bubbly. Gradually add broth, evaporated milk and corn, whisking until blended.
  • Add potatoes; bring to a boil. Reduce heat; cook, uncovered, 10 minutes or until potatoes are tender. Stir in ham; heat through. Remove from heat; stir chives into soup and season with salt and pepper.
  • Serve topped with bacon.
