Gluten Freesta blog - for my gluten free bestie

 My good friend Amy Z recently shared an amazing Gluten Free blog with me, to share with one of my besties who has gluten intolerance. I thought the blog was neat, and had some good receipes.. So I would share it with those who read my blog. Be sure to visit Gluten Freesta.


 
Below is a recipe for gluten free pasta and pesto that she shared recently on her blog.. enjoy.....


2 cups fresh basil leaves, packed
1/2 cup freshly grated Parmesan-Reggiano or Romano cheese*
1/2 cup extra virgin olive oil
1/3 cup pine nuts or walnuts
3 medium sized garlic cloves, minced
Salt and freshly ground black pepper to taste

Combine in Cuisinart (I've used a blender in the past) until desired consistency.

*I substituted this cheese for a wedge of laughing cow light cheese to make it a little lower cal, and because my roommie Lauren has an issue with some types of cheeses.

Then I roasted some grape tomatoes and pine nuts. Next, I stirred the pesto, tomatoes and pine nuts into the cooked pasta. Finally, sprinkled a little parm on top and enjoyed!
