Holiday Cookies

So, I am feeling a bit better today, perhaps that is due to the fact that I slept on and off from 1pm on Sunday until Monday am and have been diligent about drinking water, OJ and taking my vitamins.. Never the less, I am going to attempt to bake holiday cookies for the UPS, FedEx, USPO and shipment man at work (as they are all so busy this time of year, and I think it is important to say thank you!) I am also going to bake for some friends, and neighbors..

What is on the agenda: chocolate covered Oreos, choc chip cookies, Black-eyed susans, and traditional holiday cut outs (something Chris roommate has been begging me to make) While it sounds like a bit to do, it honestly will only take an hour or two, and then I will reward myself with a nap.. ha ha.. Can you tell this sick girl enjoys her rest!!!

Rolled Sugar Cookie Cut Outs
  • 1 1/2 cups butter, softened
  • 2 cups white sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
I like to pre-measure all of my ingredients into seperate bowls, I find it easier to just add it as I go!
this is what it looks like when the butter and sugar are creamed together
  1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight). 
  2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on non-greased cookie sheets.
  3. Bake 6 to 8 minutes in preheated oven. Cool completely.
