Mac & Cheese Muffins

Ok, so C and I are making a list of potential "Southern" foods that we would like during cocktail time, and for our wedding meal... One of the things we keep coming back to is Mac n' Cheese. We don't feel like it is formal enough for the wedding meal/buffet (we haven't decided which route we are going yet) but what about cocktail hour???

When I came across these mac-n-cheese muffins.. i thought they could be perfect as a passed hours d' oeurvers.. Does anyone have any thing that they love or hate when attending a wedding?? do you have views on a sit down dinner, or a buffet.. we are trying to weigh our options, and are hoping to start looking at caterers and such in June..

They look fairly easy to make, and would be perfect for a football party, tailgate, or gathering of anykind. Now I just need an event to make them for so we can try them.. And of course, I am going to have to share my findings with C .. 

Ingredients

  • 2 cups uncooked elbow macaroni
  • 1 tablespoon butter
  • egg, beaten
  • 1 cup milk
  • 1 1/2 cups shredded sharp Cheddar cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup seasoned dry bread crumbs
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a muffin tin with nonstick cooking spray. In a small bowl, stir together the bread crumbs, olive oil and salt; set aside.
  2. Bring a large pot of lightly salted water to a boil. Add the macaroni and cook for about 8 minutes, it should still be a little bit firm. Remove from the heat, drain and return to the pan; stir in the butter and egg until pasta is evenly coated. Reserve 1/2 cup of sharp Cheddar cheese and stir the remaining Cheddar cheese, milk and mozzarella cheese into the pasta. Spoon into the prepared muffin tin. Sprinkle the reserved cheese and the bread crumb mixture over the tops.
  3. Bake for 30 minutes in the preheated oven, or until the topping is nicely browned. Allow the muffins to cool for a few minutes before removing from the pan. This will allow the cheese to set and they will hold their muffin shape.

  1. omgee those sound exciting and like people would FREAK OUT WITH EXCITEMENT about them.

    mac n' cheese is FINE for the meal also. It depends on the time. I thought your wedding was earlier in the day? in that case, very fine. and it isn't a formal, formal wedding anyway. It would be different if you were at the Biltmore for a 7:00 p.m. wedding, then probably no mac n' cheese.

    I grew up going to buffet style weddings, so those are my favorite (but Marc said they are more expensive???) Tips: ENSURE you have enough tables - high ones with no chairs and low ones with chairs - so people can perch or sit with food. And make sure to discuss clearing the tables promptly with the catering staff. Buffet is fun so you can still mix and mingle and the guests can eat whatever they want (guests do love that - ha, ha) AND you can mix styles - cajun, asian, fancy, not, etc.

  4. I made these for a cocktail party by filling the cups half full. I found that the bottoms, with all the cheese settled, get greasy in guests' hands. Good news is I could take the leftover ones, smush them with a fork and microwave them for lunch.
