Kathy's Granola

Recently, one of my dear Panhellenic friends (we visited her in NY here)  posted on Facebook about making homemade granola, I immediately inquired about it, as I just love adding granola to my yogurt. She was sweet as always and surprised me with some when we saw each other in Texas for a training. C & I both enjoyed it, and when we ran out, I asked Kathy for the recipe so we could make more! I tried my hand at it today, and decided to add raisins this time! (SO GOOD).
I apologize for not taking photos during the process. I was also making homemade pizza dough, and appreciation gifts for work! Above is the finished product bagged and ready to go

Kathy's Granola
5 cups Oatmeal (not quick)
1 ½ cups coconut
1 ½ -cup almonds
½ cup sunflower seeds
Mix together in large bowl 

Bring to boil:
½ - ¾  cup canola oil
3 Tbsp. vanilla
3 Tsp. cinnamon
½ tsp. nutmeg
¼ tsp. salt
½ cup honey*
½ cup real maple syrup*
If desired use some brown sugar in place of the honey or maple syrup
Pour over the mixture in bowl.  Place in 2 9X13 pans (spray with Pam).  Bake at 325 for 15 minutes.

Stir in 1 ½ cup pecans and bake 15-20 minutes more. 

Remove from oven and cool about 5 minutes then add dried fruit (1 ½ cup comb. of dried fruit – cranberries, golden raisins, apricots, dates, cherries, blueberries)
if desired. 

Cool completely on tray.   Store in airtight containers.  Great on top of yogurt!
