CHOCOLATE-PEANUT BUTTER COOKIES
 
 I blogged about these previously, but thought I would revisit, as they are always a favorite with co-workers, and are truly one of the quick and easy go to recipes I use during holiday!

1pkg. (2 layer size) devil's food cake mix
4 oz. (1/2 of an 8 oz, pkg) Cream Cheese, softened
1/2 C. peanut butter
1 egg

Preheat oven to 375.

Place all ingredients in large bowl.  Beat on low speed for 2 minutes,then on medium speed for another 2 minutes. 
Shape into 1" balls.  Place 2 inches apart on baking sheets.

Flatten each ball in criss-cross pattern with tines of a fork dipped in sugar.

Bake 7-8 minutes or until edges of cookies are set.  Cool 2 minutes on baking sheets then remove to wire racks to cool completely.

** 1/2 C. of chopped peanuts can be added to dough before shaping into balls.
